The red ripe cherries are pulped and then fermented before being washed to remove all traces of musilage before being sundried, which will take the moisture content down to 13%. The beans are covered in a thin parchment which is safely removed through the hulling process, which also removes what is called the silver skin, leaving clean green bean. Grading is the final step before the beans are roasted, during the grading the bean is sorted into uniform sizes and defective beans are removed. Roasting takes placed on a weekly basis to ensure freshness before being delivered to the saint Helena Coffee Shop. Visitors to the plantation are always welcome by appointment, which can be made through the Coffee Shop or via telephone (290)-4371.
